Simple Black Bean Chipotle Burritos!

Brent and I wanted something simple and delicious as we were recovering from our flu and this was it. One of the bigger issues with our love of Texan and Mexican cuisine is the lack of a suitably large soft tortilla to wrap Tex-Mex delights in. Fortunately we recently discovered that gluten-free wraps exist!

These babies are about the size of your typical wrap and are pliable, unlike their corn counterparts (which often must be fried in order to bend without breaking). You’ll need the following:
6 large soft tortillas
1 tin of black beans, drained
1 tin of diced tomatoes (seasoned with chilis and/or lime works well, I like Muir Glen)
1 package of crumbled tofu (Marjon is great) or 1 cup of reconstituted TVP
1 cup of your favorite chipotle, mole, ranchero or enchilada sauce
1 large onion, sliced
flake red pepper to taste
Daiya (optional)

I sauteed the onion until it was soft. Then I added the tofu crumbles (use seitan if you’ve got a soy allergy), beans tomato and sauce. I stirred it until it was a good burrito consistency, adjusted the seasonings and the let Brent at it.

We plopped a generous amount of the burrito filling onto our new favorite wraps and then microwaved them (on top of a paper towel so they don’t get soggy) to melt some pepper jack Daiya we sprinkled on top. We added spinach after melting the cheese but we ate them before I could get a picture. Cilantro would have been good too!

It was spicy, hearty and packed with good nutrients for recovering invalids need. I suspect that’s just an excuse and we’ll do it again soon. YAY!

Vegan Breakfast Burritos!

I like breakfast. I also like burritos. Whoever thought of the breakfast burrito is on my “AWESOME” list. The word “burrito” means, “little donkey”. I like to make my burritos about the size of a small donkey. Do you see where I’m going with this?

We had some more chili tortillas and decided, “what the heck.” We made a tofu scramble. I prefer silken tofu but otherwise this recipe is pretty standard.
1 box of soft silken tofu

1 tbsp onion powder

1 tsp garlic powder

1 pinch of sun dried tomato flakes

2 tbsp nutritional yeast

1 pinch paprika

1 pinch turmeric

salt and pepper to taste

Stir that up in your non-stick skillet until it’s hot and awesome. More importantly…

We cooked up some black beans. What breakfast burrito would be right without beans? We used the following:

1 onion, diced

6-8 cloves of garlic, minced

1 cup of dry black beans, soaked overnight in an excess of water OR 1 can of beans, drained

salt and chili to taste

We heated the onions until they started to turn translucent. Then we added the beans and a jalapeño and just waited until they were hot and tender.

The beans and scramble made their way into the tortilla along with some salsa and cilantro. This was one of the better breakfasts we’ve had in a while. It was savory, spicy and loaded with delicious garlic and cilantro. We forgot the Daiya but neither of us missed it.

This breakfast is loaded with balanced protein to keep you going and a good serving of carbs to get your started. There’s virtually no fat and no cholesterol which is great because the fiber will help you digest all the other deliciousness for a strong body. Happy breakfast!

Ridiculously Easy & Versatile Refried Beans

I almost hate to admit this, but Taco Bell has become a fast food savior of mine since transitioning to a vegan diet. I can only eat so many French fries and 6″ veggie delight subs. Taco Bell rises above the rest for one reason: beans. A bean burrito, no cheese is super cheap, tasty, and vegan — no lard, you guys! I have also ordered nachos with beans only (which has to be announced to the entire staff for some reason).

I was itching to have some refried beans at home, so I went to the store to buy a can. I spotted the Fat Free can first. Fat free? No way! So I picked up a can of Traditional style refried beans. I read the ingredients. LARD. No way! I checked out the Fat Free Can was delighted to read that fat free meant no lard and simple ingredients. Yay! Now, you may be thinking that I could have started with a can of pinto beans. Yes, I could have. For convenience, though, a can of Bush’s Fat Free Refried Beans is perfect.

Melissa’s Ridiculously Easy & Versatile Refried Beans

Ingredients:
1 can Bush’s Best Refried Beans, Fat Free — I used about 1/3 can per serving
Shredded ‘cheese’ — Christie sent me some Daiya and I am in lust with this cheese
diced onion — I used green onion since I had some
your favorite hot sauce — I’ve tried it with Sriracha, Tabasco, and Taco Bell hot sauce
Extra seasonings — the can of beans is already seasoned, but you can add garlic (fresh or powder), onion powder, cumin…

Put your beans in a microwave-safe bowl. Add your seasonings and smoosh it in with the beans. Top with the cheese. Microwave, covered, for about a minute (use a bowl so that the cheese doesn’t melt onto whatever cover you use).

I like my onions crisp and raw, so I top the warm beans and cheese with them. I used shears to chop my green onions. Then, top with your hot sauce. Mix it all together and:

  • Stuff it in a tortilla to make a bean burrito OR
  • Serve it with some Spanish or Mexican rice OR
  • Throw it on a bed of lettuce; add tomatoes, avocados, jicama, and cilantro and you’ve got yourself an awesome salad OR
  • Put some tortilla chips around it and you’ve got yourself some fancy bean and cheese nachos:
