Hipster Chic Volume II : Marinated Tofu

A vegan friend was discussing vegan cooking gadgets with us on her visit from elsewhere and suggested we try out the TofuXpress. We decided to give it a spin, and I will sing its praises for years to come. The TofuXpress is freaking sicknasty bodacious.

As the resident tofu presser in our household, I have struggled with the perfect way to make the texture of tofu meatier. I tried conventional pressing methods (tofu on paper towels, pressed down and weighted by a plate on top), and not so conventional methods (freeze, thaw, freeze, thaw). The former was certainly the most effective, but it necessitated a lot of waste. The TofuXpress makes it easy for me to make a nicely textured tofu that I can marinate.

So, for this simple recipe, you can use the paper towel method, or in my case, use a TofuXpress.

Take your block of tofu, drop it into the Xpress, use the heavy spring for pressing. Before putting it in the fridge, dump some of the already pressed liquid down your sink drain for optimal drainage. Stick it in the fridge, and go do something fun for an hour. I chose to dance to some Earth, Wind, and Fire records.

Pull the tofu out of the fridge, drain the liquid, remove the press. Now, to marinate, there’s a handy lid that attaches to the base of the Xpress that also acts as a seal for marinating.

Go ahead and prepare your marinade. For this experiment, I used a combination of soy sauce, teriyaki sauce, Sriracha and Bragg’s Liquid Aminos. The soy sauce and liquid aminos are there to help thin out the mix as tofu is not quite porous enough to soak in the teriyaki and Sriracha, which is where the awesome flavor is at. Dump your marinade into the Xpress with the tofu, let it soak for a half hour. After that time is up, flip the tofu, put the lid back on and let it soak another half hour.

The final step is to press out excess marinade for a last half hour period. I know that this has taken up 2.5 hours already, but I promise it’s worth it. Drop the excess marinade into a dish, save it for later, or use it to dip. You can slice up the tofu and eat it as is, or pan sear it for science.

If you want to save time, do the following :

  1. Prepare marinade.
  2. Press tofu overnight.
  3. In the morning, drain, switch to marinade.
  4. After daily activities, enjoy your tasty marinated tofu.

This will save a lot of waiting time, and your tofu will be freaking amazing after that nice long marinade session.

In short, the TofuXpress made it super easy for us to make firmer tofu, and enabled us to experiment with marinades. It saves us from wasting paper towels, and doesn’t take up a counter top. It’s dishwasher safe, and all of its parts store inside of itself. The TofuXpress has been a boon to us. Let us know if you have one, your marinade recipes, or feel free to ask us about it.

Hipster Chic Volume I : Peanut Butter Pickle Time

Growing up, my father introduced me to what would become a life-long obsession. And today, in this post, I will share the secret family recipe for this small slice of gourmet culinary nirvana. I present to you the peanut butter pickle sandwich.

Ingredients :
Bread
Peanut Butter
Pickles

Prep Time :
1 Hour (Without Instagram, 5 Minutes)

First, slice your bread. What we have here is an artisan gluten-free muesli loaf hand crafted locally here in Miami. Slice as many starchy canvases as you deem necessary. For this post, I will be making it face ouverte.

Next, take your peanut butter, and spread a generous layer on top of the bread prepared in the previous step. Don’t be shy with your peanut butter as it will be the mortar holding together what will become your masterpiece.

For the third step, take your pickles and slice them if they are not pre-sliced (as pictured here). This slightly sour ingredient will be what makes your sandwich sing. It compliments the creamy sweetness of the peanuts nicely.

Finally, enjoy the effing crap out of that sandwich. Treat it as a secret lover you meet with for a secret tryst after months of longing for its soft, lusty buss.

Milk : It does a body bad.

In a discussion with a fellow student at BJJ, they admitted that they knew that consuming meat was not in line with what they thought was right. They also stated that in addition to meat, they’d be fine saying goodbye to cheese. But what made me cock an eyebrow was when they said ‘But milk? There’s no way I could go without it.’

I would encourage them to try for a few reasons (read : I’ll try to keep this quick and non-preachy).

1) Milk comes from pregnant, nursing cows. Outside of the moral and ethical implications of this happening at large dairy farms, there are direct physical consequences. First, your getting hormones from a pregnant cow. That includes estrogen that would otherwise make you grow fabled soy-mewbs as some media outlets would lead you to believe. Also, the mother cow produces proteins that are there to encourage and strengthen a bond between it and its offspring (ie – introduce addiction). Humans and other breast/teat feeding species do the same, but by drinking cow milk you’re getting addicted to cow boobies. And you’re growing cow boobies. Weird.

2) Milk increases bone loss and osteoporosis and other bad juju. Calcium is awesome when it comes to making and strengthening bones. Acid is not good for your bones. Most milk products weigh in on the acidic side of the pH chart. Large quantities over a long period of time good bones does not make. At all. The science lies in how your body sacrifices minerals like calcium to help neutralize the acidity. More than bones, an acidic environment is a great place for skin problems, allergies and GI problems to root and thrive. A plant based diet, on the other hand, will help keep your body riding the alkaline wave your body craves.

3) Milk is mucous forming. Now, I like to hawk loogies and snore like a diesel engine as much as the next person, but excess mucous isn’t really my bag. For one, it can introduce respiratory issues. What’s more is it can affect sleep and increase ones susceptibility to seasonal allergies. The bottom line is that by eliminating dairy, you can breathe easier than if you eat a block of cheddar and chase it with a gallon of 2% before bed. Don’t do that, by the way.

There are scads of other reasons not to eat dairy. To me, hormones, acidity, and mucous clock in as top factors in deterring me from consuming dairy. I hope you learned something through this post, and if it’s all old hat to you, hopefully it will help aggregate conversation with someone you know who refuses to give up the moo juice.
