Apple Bake!

This was something that happened because I wanted to lighter breakfast and didn’t want to fuss with it too much. Did you know apples have almost the exact same nutritional value cooked as raw? I guess that makes sense.

I cut up 2 pounds of apples and tossed them with 2 cups of Cascadian Farms Berry Cobbler granola. I baked it for 30 minutes at 350F and then set it out to cool a little before we ate it. This is just as good for breakfast as it is for dessert!

If you’re wondering why the apples look so pink, it’s because they’re mountain rose apples. I love them because they’re visually stunning and taste like honey crisp apples. Yay!

Special Note : Apples are super sugary, and loads of apple for you or a rabbit can be bad. Especially bunns as they are easily diabetic. The more you know! ( ^u^)

Adventures in Fruit: Rose Apples!

Winter feels like fall in Florida… well, kind of like fall. We’re getting some lovely apples from the North and I’m about to share a special one with you: mountain rose apples. These apples don’t seem like much special until you cut them open: PINK!

These apples are crisp and sweet in flavor like a Fuji apple but with the skin texture of a golden delicious apple. Personally I’m a fan of royal gala apples but these are great for making pink apple cobbler or applesauce. They’re really spectacular. I hope you find some at your market!

An Apple a Day…

I realized today that I haven’t been eating much fruit lately. I forced down some oranges earlier in the week but have otherwise had no appetite for fruit… or really, any food. I wanted to be good today, so I snagged an apple from my sister’s kitchen and sliced it up into wedges.

To make things more fun and interesting (and inspired after rummaging through my nieces’ Halloween candy), I took a heaping tablespoon of peanut butter and softened it by heating it in the microwave for 10 seconds, stirring it, and then heating it for another 10 seconds. I took the melty peanut butter and drizzled it on the apple slices.

Voila! One of the easiest snacks ever!

Apple Tempeh and Mozzarella Sammiches!

This was a really easy meal on a night when we were exhausted. The suggestion came from a friend (THANK YOU!) and it was definitely worth it.

We browned some smoky maple tempeh while some multi-grain bread topped with teese mozzarella. This is bread that a local lady makes for us, gluten-free and vegan. She’s an incredible baker and I hope all of you who aren’t expert bakers and a few who cartinly are(I’m looking at you) can find vegan [gluten-free] bread that doesn’t taste like it’s been frozen between 2 pieces of cardboard in a diesel truck for 2 years. Well, that’s my opinion of most store bought bread. On to noms!

We stacked the tempeh on the bread with some spinach and apple slices. I like royal gala apples. They’ve got a buttery mellow flavor that isn’t too acidic. We use them to juice too!I like my sammies open faced (above) but Brent is more traditional (below).

Mustard is important to me when I make this particular sandwich (but back in the day it was with turkey and soft cheese. Ew.). I think the spiciness brings out the flavors in the tempeh, spinach and apple. The mozzarella is just awesome and I want to take it on a date.

Don’t tell Brent he’s got competition from non-dairy cheese or the sammies will end up… oh… yeah, he’ll eat it all. Yay!

Apple chips!

This is one of my favorite snacks when I’m feeling peckish at the lab early in the morning and don’t want to accidentally eat something that’s not so great for me like a rice krispy treat or bag of potato chips from the hospital cafeteria or one of the local coffee shops. You’ll need a dehydrator for this one and some apples. That’s it.

 

I used a mandolin slicer for this particular project and managed to remove part of my pinkie. After showing my finger to a friend who is a plastic surgeon he informed me that he won’t let his significant other own a mandolin slicer (or a snow blower, but that’s another post) telling me that they’re “finger death traps”. He is doing his residency at Massachusetts General Hospital so I suspect he knows what he’s talking about with regards to the snow blowers and I can tell you first hand (oops, pun) that the mandolin makes life easier up until the point where you can’t wash your own hair. Just saying.

Slice your apples carefully with a sharp knife or mandolin, put them in the dryer (mine goes overnight), and you’ve got a crispy, organic (if you’re so inclined), filling, preservative free snack.

Slice them thicker or thinner depending on your taste. I make a new batch every couple of days from the $3 3lb bags of apples that I get at my supermarket and re-use the same plastic baggies to transport them to work. Thicker chips don’t get crushed as easily but thinner ones are more decadent!
