Adventures in Fruit: FUYU!

This sounds like an insult but it’s actually a delicious fruit. Sometimes called ‘persimmon’ this particular variety should be available in most specialty markets when in season.

Fuyu (when still yellow) has the texture of a not-quite-ripe nectarine with the flavor of honeyed pear with a dash of vanilla; I prefer it at this stage because it’s sweet but not overwhelming. When completely ripe it tastes like a mouthful of clover honey. If you see it, don’t hesitate… try it!

Vegan Beer : Julian Hard Cider – Black and Blue

TV is back with a brand new addition. Something that’s been holding us tightly, just kidding it’s another cider review you can view nightly. This time it’s Julian Hard Cider’s Black and Blue. It’s delicious.

Epic Breakfast Burritos!

Brent and I have extra time to spend together on the weekends and watch our bunnies bounce around while we eat delicious breakfast food. This particular weekend we decided to make breakfast burritos instead of our usual tofu scramble and tempeh.

I did make our usual tofu scramble with some porcini mushrooms added for flare and sauteed some tempeh. I also chopped up some tomato and tomatillo which we layered on top of spring mix, scrambled tofu, tempeh and then covered with some ranchero sauce we bought.

IMG_2386We wrapped those babies up and stuffed them into our faces for a delicious messy breakfast that was full of fiber and protein and nutrients to give us energy to go and enjoy the rest of our day. What’s your weekend routine? Do you take extra time for awesome vegan breakfast?

Perfectly Easy Tempeh Bacon

I’ve been working really hard lately and haven’t had time to really cook or even enjoy my meals. My family and my co-workers have been taking good care of me, cooking some meals for me or bringing in vegan sandwiches for lunch. I’m lucky and grateful! But today, before I continue working some more, I wanted to make myself a satisfying breakfast.

Tempeh and I haven’t always been good friends. I eat it but I’m often underwhelmed by it. Today, I tried out something different and super easy. I cooked the tempeh with a mixture of 2 tbsp soy sauce, 1 tsp of maple syrup, and a dash of liquid smoke.

It looks and smells pretty as it cooks. For you Filipinos out there, I think this is a great (though less garlicky) alternative to longanisa that doesn’t take a lot of effort or require hours of marinating time. This would have been great with some garlicky fried rice, but I’ve had a lot of rice lately. So I roasted some potato straws instead, sprinkling them with garlic salt. I completed the meal by making a tomato salad, seasoned with salt and pepper.

Really easy. Really satisfying. Now feeling really energized to get started on all the work I need to get done today! –Melissa

TV – New Grist Sorghum and Rice Beer

What’s new, gang? We’re awesome, thanks for asking! And we’re even more awesome than usual because we tried a new vegan, gluten-free beer. This particular brew comes from Lakefront Brewery and it is their New Grist sorghum and rice beer. It was pretty tasty. Behold our videotaped reaction (some may be NSFW).

Chopstick Kebabs

If you’re like me and Brent, you’ve got a drawer filled with chopsticks from your favorite Asian takeout or delivery. We decided to try and get rid of some by making kebabs. Along with those we used the following:
1 block of tofu, pressed and cut into 1 inch cubes (omit or replace with seitan if you’re got a soy allergy)
2 medium zucchini, cut into 1 inch pieces
1 onion, cut into 1 inch squares
1 bell pepper, cut into 1 inch pieces
1 carton baby bella mushrooms
1 carton of cherry tomatoes

Other things that can make kebabs awesome include basil leaves, sliced jalapeños and other hot peppers, and any other veggies that can withstand being skewered. We assembled the kebabs and then placed them into a dish filled with marinade (tamari seasoned to taste with ginger extract and garlic works well, but store bought varieties work well too) until we were ready to cook them (at least an hour). Bake at 350F/175C for 45 minutes or grill until the veggies are tender if you’re so inclined.

Wait for them to cool and EAT THEM! Now there’s space in our drawer for more chopsticks.

Blue Foot Mushrooms!

So these exist and I’ve decided to share. I don’t know if they’re worth seeking out if they’re not easily found in your area but if you’re a junkie for new food experiences, this might find its way onto your bucket list.

Bluets or blue foot mushrooms are more blue the fresher they are. These took a while to get to me from Canada but they’re still beautiful (apologies for the quality of the photo… I was overeager to eat them.) These are milder than some other mushrooms and less likely to create an adverse reaction the first time you try them (unlike morels or lobster mushrooms which can cause mild gastric upset the first time they’re eaten.) These are sometimes cultivated but mine are foraged from a friend’s place in Ottowa. I don’t know how to tell these ‘shrooms from the dangerous kinds so I’ll just thank my friend who sent them along for educational purposes and admit that I ate them sauteed with Earth Balance butter, salt and pepper in a wrap with apple, spinach and ‘gouda’ and it was AMAZING! They do lose their blue color when cooked but maintain a beautiful meaty texture and earthy savory flavor.

Food for Thought

Did you hear that a federal court has ruled that veganism may count as a religion? Sakile Chenzira was fired from her job at a hospital because she refused a flu shot due to eggs used in its production. She is suing the hospital for religious discrimination. This isn’t the first time this has happened, though the 2002 lawsuit was dismissed.

When I first saw the headline about veganism being counted as a religion, I chuckled. I’m happy with my lifestyle and I’m serious about the changes I’ve made, but I can’t help but feel that we vegans sometimes take ourselves a little too seriously. How intense is too intense, though? How does our motivation to be vegan impact our everyday decisions?

I agree that the termination was wrong — and I say that as a vegan who got her flu shot without blinking an eye. Now, if I was a strict vegan and got fired for not getting a flu shot, I would definitely sue, even if I did work in a hospital where it’s important that employees do whatever they can to prevent illness. But I’m not vegan for religious reasons.

It can be challenging when people question why I’m vegan or when people are insensitive about it. We’ve all been there and had those conversations or awkward experiences. That said, I’m not as offended by comments on my veganism as I may be about my ethnicity or faith or something I can’t control like my height. Should I be more sensitive? On the other hand, wouldn’t it be a little hypocritical of me to take offense if someone offers me a steak when I used to eat steak whenever I could get it? What would it take — what situation can occur — that would make me stand my ground as a vegan?

Sunday Bunday!

Our bunnies got some of the best presents from Melissa for the holidays: willow! Here are their happy faces chomping through an awesome treat. THANK YOU, MELISSA!

A few hours later the willow cube was no more.

A friendly reminder, please spay and neuter your pets. My older sister *really* wants a German shepherd and didn’t know that there are German shepherd rescues dedicated to purebred animals. Check online for your local purebred rescue if you want a corgi or daschund or Hamalayan cat. They’ll be spayed or neutered, potty trained and you’ll know in advance if they’re good with kids, cats, dogs, noise or anything that might be relevant to your home.
